Brew ratio

The weight of dry coffee against the weight of liquid it produces, written 1:2 for espresso or 1:16 for filter.

Both numbers are weights, not volumes: 18 g of coffee giving 36 g in the cup is 1:2, whatever the clock says. Changing the ratio changes strength; changing the grind changes extraction.
