Hario's conical dripper rewards an even pour and punishes a careless one. Here is the pour that works.

The V60’s spiral ribs let air escape along the whole cone, so the flow rate is set almost entirely by your grind and your pour. That is what makes it both the most expressive filter brewer and the least forgiving.

What the cone actually does

The ribs hold the paper off the wall, so air leaves the bed along the whole cone and water never has to push it out. The single large hole at the bottom restricts nothing. Flow is therefore set by two things you control, the grind and the pour, which is why two people brewing the same coffee on the same V60 can land three minutes apart.

The pour is the variable

Water poured in the centre drains through the middle of the bed. Water poured against the paper runs down the wall and reaches almost no coffee. A spiral that stops short of the edge keeps the bed level and the flow even. Swirling the dripper once at the end flattens what the pour disturbed, which matters more than any technique argument about circles.

Where it goes wrong

  • Drawdown over 3:15 means the grind is too fine, or the bed was disturbed and the fines migrated. Go coarser before you change anything else.
  • A crater in the bed means the pour was too aggressive in one spot.
  • A high, dry ring of grounds on the paper means water bypassed them. Rinse it down with the last pour rather than accept a weak cup.
  • Sour and thin together is under extraction, not a bad coffee. Finer grind, hotter water, longer contact, in that order.

The paper matters more than the dripper

Hario’s own tabbed papers, Cafec Abaca and a generic cone are three different flow rates on the same brewer. Rinse whichever you use: an unrinsed paper adds a taste of its own and cools the cone.
