Over extraction

Pulling too much out of the coffee, which brings bitterness, dryness and an ashy finish. The cure is a coarser grind or a shorter contact.

It is a measurement as much as a taste: above roughly 22 per cent of the coffee’s mass dissolved, most coffees turn harsh.
